everyone’s lips is with no doubt: Moments.

The Chef Carme Ruscalleda and her son Raül Balam are revisiting Catalan
recipes and even inventing the first anti-aging menu of Barcelona..

On the Catalan side of the menu you will discover totally renewed classical
dishes like Arroz caldoso de gamba con picada de pescador (rice dish with
broth) – Fricandó (veal stew) and suquet (fish stew) – Shrimp Tartar-
Seabass with fig chutney and hibiscus salt – Veal Cheeks with turnip
vegetable ravioli and red fruits..

A delight and lot of imagination!!

But even more visionary and trendy: a “anti-aging” menuwhere the food

In this menu, mini pizza pies with artichokes and the Joselito ham, or

Saturday, 4.20pm, the lunchtime rush has died down. Most local customers
are taking coffee and *licores*. “Paella for Pablo,” the call goes out.
And, at 4.23pm Pablo has his paella, done the way he wants it – with a
whole *butifarra*(sausage) on the side. This very popular, well-organised,
local standby, its pavement tables set to catch the best of the afternoon
sunshine, is always busy. For good reason – they serve a reliably good
range of tapas including *pescadito frito *(whitebait) *gambas rebozadas*(prawns in a light batter)

mussels, sausages and the whole kaboodle.

Vegetarians will be pleased to note that they serve a wonderful vegetable paella with

goat’s cheese. The terrace is a good spot in the evening.

nice place to enjoy seafood.

This old hole in the wall serves simple dishes bursting with flavor. It’s
a small, busy, friendly place – you may have to prop yourselves at the bar
before sharing a table with a couple of locals, like dining in a large
family kitchen. They’re famed for their *bombas *(meat-filled mashed-potato
balls rolled in breadcrumbs) served with a choice of three sauces, graded
by spiciness – *salsa del diablo *being the hottest. And then there’s the
bread – try the *pa amb all i oli *– huge slices of grilled bread slathered
with fresh, homemade garlic mayonnaise. Simple, but it works. Try the
marinaded sardines, the fried artichokes, squid and the *bacallà *(salt
cod) with a tomato salad.

The most known varieties are:

1.The Seafood paella (In Spanish: paella de marisco)
2.The Valencian Paella (In Spanish: paella valenciana),
3.The mixed paella (In Spanish: paella mixta);

The Valencian paella is made with white rice, vegetables, meat (rabbit, chicken, duck).
The Seafood paella replaces meat and snails with seafood and omits some beans and green vegetables.

Tips
Do not go for the paellas that are frozen pre-cooked or advertised with pictures in Barcelona.

Paella is served as the menu del dia on Thursdays in most restaurants in Spain. So you can try it as part of a three course meal for around 9 to 12 euros and it is served in most restaurants . This traditions starts from the old days since it took long for fresh fish to travel inland and since Sunday was a day of rest, fish would start their inland adventure on Tuesday on horse and most places would only get in on Thursday so that is where the tradition starts for having paella on Thursdays.
